Sharing great vegan food is Nicole Arciello's passion. And her obsession.

Nicole has over 10 years experience as a vegan chef and baker. Her baked goods have been featured in local restaurants, at pop-up events and farmer's markets. 

 

She has developed recipes for restaurants and blogs has been featured in the Daily Gazette newspaper in Upstate New York. 

Nicole has been active in the animal-rights community in Albany, NY for the past 10 years. Shortly after becoming a regular contributor on the Times Union Animal Rights blog, she co-founded Albany Animal Rights, a local advocacy group protesting various animal-use industries – circuses, rodeos, puppy mills, fur, etc.  Nicole is also one of the founding members, and current executive director, of the national organization, Horseracing Wrongs, a non-profit committed to ending the cruel horseracing industry in the United States. 

Nicole has presented cooking demos in multiple public forums, and designed a series of vegan cooking classes (including the four-week course, Introduction to Vegan Cooking) for various school districts’ continuing-ed programs and online. She holds a Plant-Based Nutrition Certificate from eCornell. 

 

Imagine Desserts Vegan Bakery is a one-baker, small batch, special order bakery specializing in vegan cakes with the mission that anything and everything can be made - and is better - vegan.
